Hello everyone,

 

Like Cindy, I just want to say Hi and that I have just joined. I am a very

young 45 (yeah, I still rock!) I have been vegan for about 5 years now and

don't regret it at all. I live in the Baton Rouge area and living here

makes you feel like the only living vegan in the world! I still miss fish

and cheese. I can't find a really good vegan cheese. Every one I have

tried is virtually tasteless and you could put it in the microwave for a

year and it wouldn't melt! The only really good vegan cheese I have found

is Soymage vegan Parmesan. Even my meat-eating hubby can't tell the

difference. Does anyone have any recommendations for a good vegan

cheddar-type cheese?

Would love to hear from " y'all " (can't say that properly because I am

English and it just doesn't come out the same!)

Hi Pam!

 

You have my sympathy living in Baton Rouge and being vegan. I'll bet

that's really hard! I know what you mean about missing fish, and

especially cheese! There is this product that taste very similar to

fish. I belive it is made by a company named " Worthington " and they

are called " fish fillets " . I've used them to make a fish fillet

sandwiches before, and used veggie cheese with tartar sauce and they

are very close to those McDonald's fish fillet sandwiches. As far as

the veggie cheese goes... I've got 2 different ones that we like. One

is called " rice cheese " and it taste pretty good, and melts real

well. The other is called " veggie slices " and it taste good and melts

real well too. Our favorite of the 2 is the rice cheese though. I

get these at our natural foods store. It took us many trials to

finally find the right soy cheese that had the best flavor and one

that would melt real well.

Hi Cindy,

 

Thanks for the info, I really appreciate it. I have seen the rice cheese in

my local health store but I haven't tried it. I will get some today. As

for the Veggie Slices, I did try them and they are good, but they contain

sodium caseinate, which is a milk by-product, so I don't eat them. I

haven't tried the Fishy things though. I will ask the health food place

about them. Have you tried Now and Zen's Unturkey? This is what I eat at

Thanksgiving and Christmas. It is lovely. It has a vegan stuffing and they

give you a tub of vegan gravy to go with it. It also has a crispy " skin " on

top. I really look forward to it every year! It's even better cold!

Hello Pam,

 

My husband and I just went vegetarian after 2 1/2 years of eating

meat and junk. I was a vegetarian for 3 years before I got married

and 6 months after. We use Soya Kaas brand cheese. They sell

Mozzerella, cheddar, and all different other styles. I'm not sure if

they're totally vegan. They might have some casein in them, which I

know some people don't eat. There are some different rice cheeses

available too. We live in Vermont and there are plenty of health

food stores available to us. We also buy from a natural food co-op

that my mother runs. It's called Northeast Cooperatives. I think

they have a web site under that name. You could find a buying coop

in your area that way.

 

A really good cookbook that I also use is called " Simply Heavenly "

and is totally vegan. It's written by a group of Monks I think. I

think if you look around at Amazon.com or Barnes and Nobles you could

probably find it. They have a lot of really good recipes in it.

Another good book is " The Uncheese Cookbook " by Joanne Stepaniak.

They have ideas for all kinds of cheese things like fondue, etc.

 

My mother also wrote 2 vegetarian cookbooks that I am presently

trying to republish. They always help to give me ideas for dinner

and stuff.

Hi Pam.

 

I haven't heard of Now and Zen's Unturkey. You make it sound

worth trying though ;o) Our local co-op sells something called

" Tofurky " and it's supposed to be like the real thing, and sounds

like what you have described. We have never tried it before though,

but I was thinking about doing that this year. I found a recipe on

how to make one, so I tried making one just last week. It was pretty

good, but it wuzn't turkey! :o) We would eat it again though! I'll

post that recipe soon. It is really quite easy to make. The one I

made was supposed to have a crispy " skin " too, some of it did, and

other parts didn't. It was my first time to try making it, so I'm

sure with practice it will get better. With all that went into it,

it cost around $10 to make. I didn't have some of the ingredients on

hand, so I had to buy them new. For me to make it again, it would

probably only cost me around $6 since I have everything I need now.

 

I have tried the Soya Kass cheeses and they really lack in

flavor, but melt really, really well. We have also tried the almond

cheeses and they taste good, but then again... the melting is the

problem. They melt, but... it kinda all sticks together. If on a

sandwich, it's great.

Hi Everybody! I am a 45 y.o. newly minted vegan from North Carolina in

the USA who just joined this group a few days ago. I have'nt had time

to introduce myself yet, so I thought I should just drop a line to

say " Hi! " . I look forward to sharing advice, recipies, and support with

everyone.

I only became vegan a month ago, and am so happy to find a place where

I can talk to like minded folks!
