Guest guest Posted May 22, 2006 Report Share Posted May 22, 2006 My daughter made this last night. She got the basic idea from a cook book at the book store and modified it. It is absolutely wonderful! Pasta w/ Sweet Potato Sauce 2 large Red-skinned Sweet Potato...yams probably to you 2 red bell peppers 1 cup plain soy milk 1/2 cup minced Italian Parsley 1 TBSP garlic powder 1/2 tsp ground nutmeg 1/4 tsp. ground mace 4 TBSP dry sherry 4 TBSP Olive Oil 4 TBSP vegan margarine 1 pd. Fusilli Microwave sweet potatoes til done...let cool a bit and then peel. Cut the red peppers in half, stem and seed the halves. Put under broiler skin side up until blackened and then place in paper bag until cool enough to peel. Slice into 1-2 " lengths. Set aside. Puree sweet potatoes with the soy milk, sherry, garlic, nutmeg, and mace. Cook the fusilli til done. Take 1/2 cup of the pasta cooking water and add to the sweet potato puree and blend, then add the parsley and just mix briefly. Drain the fusilli, toss with olive oil and melted margarine. She made a butt load and I suspect we shall be eating it for a month. Oh, was that presentation? LOL I should do presentation?
