Asian Spicy Noodle Salad-recipe and I'm New Here

Hi to everyone, I'm Kenia and I'm not very good

at introductions, I'm ovo/lacto vegetarian for

almost one year and I know PT.

This is one of my

favorite salads, it took many months waiting

for my friend to share this recipe with me.

 

Asian Spicy Noodle Salad

 

2/3 cup creamy peanut butter

1 tablespoon sesame oil

1/3 cup rice or red wine vinegar

1 tablespoon red chile flakes

1 tablespoon sugar

1 tablespoon Dijon mustard

1 tablespoon coarse ground coriander

2 tablespoons soy sauce

1/2 cup canola oil

1 pound spaghetti, cooked and drained

1 English cucumber, halved and 1/8-inch slices

1 red bell pepper, julienned

1 bunch scallions, sliced

chopped cilantro is optional

1/2 cup chopped roasted (salted) peanuts for garnish

 

In a bowl, whisk together the peanut butter, sesame

oil, vinegar, chile, sugar, Dijon, coriander and soy

until smooth. Whisk in the canola oil and check for

seasoning. In a large bowl, toss dressing with the

pasta, cucumbers, bell pepper and scallions. Check for

seasoning.

Serve in large serving bowl. Garnish with peanuts.

This sounds great. It is a variation of one I posted, about a month ago,

called Cold Thai Noodle Salad. I love these kinds of salad and look forward to

trying this. Thanks for sharing.

JudyI never saw your recipe, I will look fo it. Is it in this groups

files, I plan on looking in them soon. I also like to make Chinese

cabbage salad, it makes a good lunch to take to work.

I never saw it show up in the group file, so I think they haven't had time to

add it yet, but I just sent it again. It is delicious. We absolutely LOVE

this. It is addicting.
