Turkish Potato Salad (Patates Salatasi)

This is a very easy dish to make and is very similar to American potato

salad, but without the mayonnaise. it is just as tasty, and more healthy.

 

2 lb. red potatoes or new potatoes, peeled

4 TB lemon juice

7 TB extra virgin olive oil

2 TB fresh basil, chopped

3 TB fresh mint, chopped

1/4 tsp. cayenne pepper, or to taste, optional

6 green onions, chopped

1/2 tsp. ground black pepper

1/2 tsp. salt

 

Cut potatoes in small cubes and boil for 15 to 20 minutes, or until tender.

Drain and place in medium bowl.

 

Add onions, mint, basil and mix well, being careful not to crush the

potatoes.

 

Stir together olive oil and lemon juice.

 

Stir in black, cayenne, and salt. Pour over potatoes.

 

Chill for an hour in the refrigerator and serve.
