Paul Posole Ensalada (Hominy Salad) 1 pound can white or yellow hominy, rinsed & drained 1/4 cup chopped green pepper 3 chopped up green onions 1 cup chopped celery 1/4 cup drained pickle relish (not sweet kind) 1/4 cup sliced black olives 1/2 tsp. salt 1/4 tsp. black pepper 1/4 tsp. celery seed 1 cup cubed or grated cheese jack or cheddar 1/4 cup mayonnaise some chopped cilantro dash crushed red pepper flakes You could add one chopped jalapeno if you want Mix all together and chill. Thanks for this recipe.And I sure like the name Posole Ensalada .
