Tomato Sandwich

This time of year is when my tomatoes are starting to ripen and turn

red and sweet. My very favorite way to eat a tomato is just right

after I pick it. Can't beat the sweet taste...and temp is just so

nice and warm from the sun......but can't eat them all that

way...LOL!

 

Another great way to enjoy fresh tomatoes is on a tomato sandwich.

All you need is:

 

1. Some kind of substantial mixed grain bread slices--I'm using one

now that I really like. It's a store brand 12 grain...it is very

chewy with a lot of the whole grains still recognizable. This makes

a good contrast with the soft tomatoes.

 

2. Mayonnaise. I've just tried vegenaise (thanks so much to Donna's

recommendation) and this is my mayonnaise of choice from now on. It

is truly the best. But regular mayonnaise is no slouch either...lol!

 

3. Fresh ripe sliced tomatoes. If you have fresh ripe green

tomatoes to add in, all the better!

 

4. Seasoning salt

 

5. Optional: very thinly sliced onion; fresh spinach leaves

 

Slice the tomatoes and put mayonnaise on the bread slices and then

arrange the tomato slices on the first piece of bread...sprinkle

with as much seasoning salt as you want (a lot for me) and then put

the second mayonnaise bread slice on top and slightly mush down.

 

Let sit a few minutes and then eat.

This makes me so hungry! I love vine-ripe tomato sandwiches!

When I was a wee little girl that is all I would eat for lunch.

My mom would walk up the road to our neighbors house, a cool

old man who had a beautiful garden and walked with a cane, and

he would give us handfuls of his extra tomatoes. This was the 60s,

so my mom used white Wonder bread and lots of Hellman's mayo. *lol*

[Hellmans mayo is the eastcoast name for Best Foods mayo].

When I was about 15 years old, a friend introduced me to a sprinkle

seasoning to add to the tomato sandwiches that I just LOVE!

McCormmick's Salad Supreme! Yum!

I have found cheaper brands of it too since McCormmicks can get a

little spendy if you don't find it on sale.

The brand I have on my spice rack now is made by Johnny's out of

Tacoma Washington.

Vegenaise is the best... ranks right up there with Best Foods mayo

in flavor and texture. :)

Now you're making me hungry. Sigh! Alas, our tomatoes plants are just

staring to bloom. I can hardly wait for those big, ripe home grown tomatoes to

be

ready.
