Blueberry Cornbread Loaf

I held off making this, I cut it out of a magazine

probably 8 or 9 months ago. I believe it was a Family

Circle. It isn't sweet like a dessert and was the

best along side my crockpot pinto beans and diced

avocado yesterday.

 

Blueberry Cornbread Loaf

 

2 cups all purpose flour

1 cup yellow cornmeal

3/4 cups sugar (I used raw organic)

1 Tbl. baking powder

1 tsp salt

1/2 tsp. baking soda

1 cup buttermilk (I used dried mix with water)

1/3 cup vegetable oil

2 eggs (large)

1 tsp. vanilla

1 cup fresh or frozen blueberries

 

Preheat oven to 375 degrees and grease and flour

2 8X3 loaf pans

 

In a large bowl stir first 6 (dry) ingredients

together

and set aside.

In a medium bowl whisk together the buttermilk, eggs,

oil, and vanilla. Gently incorporate the wet mixture

into the dry and stir until moistened.

Fold in the blueberries and place batter into pans.

Bake for 25 to 30 minutes, until toothpick inserted

comes out clean. Cool on rack for a few minutes and

remove from pans and continue cooling.

This sounds good. I love those quick bread recipes that make more

than one loaf, too. One to eat now and one to freeze for later, and

you only heat up your kitchen once.

Shawn was exporting the Breads folder to our recipe archives group

this weekend, and as he was wiping the sweat from his brow he said,

" Who eats all this bread? " *lol* We do! We do! Just a little slice here

and there, but it is oh so nice to have so many great recipes

to make so we never get bored.
