Anasazi Beans!

I was shopping last night in a local healthfood place and I found a

bulk bin with organic anasazi beans so I bought some right away.

They are so pretty! I have read good things about them, too from

groups and just doing a bit of online snooping. I am looking through

my cookbooks to come up with ideas for making a crockpot stew

for dinner tonight [i will be sure to share my creation if it is a hit]. :)

 

Any recipe you enjoy making with these pinto-pony looking beans?

I'd love more ideas for using my stash. TIA

OMG, you found them in a bulk bin??? So. Jealous!

 

Try my Santa Fe Stew. I'm pretty sure I posted it here - I think

Shawn tried it even. The original recipe calls for pintos, but my

favorite is anasazi (a pinto antecedent).

I got a yummy smelling stew in my crockie right now.

My veggie-hating meativore son even said it smelled

delish [shocked me to hear him say that because he is

very neg-o-tive~ teasing about my vegetarian dishes],

so we will see. I typed up all I did when I put it together

so if it is good I will post it. :)

 

I knew somebody posted a recipe for using them a while

back, but in my haste looking through the files I didn't

see it in the title. I am writing that stew name down now

because I am going to try that one next. Thanks!

 

The beans were labeled as organic and were only $1.99 a

pound. Is that a good price?

So cool that meat-o son thinks it smells good. Can't wait for the

Yay! Trust me, you will enjoy. If you don't like it hot, don't use

all the peppers it calls for - I'm pretty sure I would have posted

this in there, but I only use 2 small chipotles in adobo, or 1 medium

one, and that's plenty of heat for me. The original recipe is quite a

bit sassier.
