I made this for the woodcrafter shop guys nexy door to my job and they made me a nice surprise for it, that's how much they enjoyed it. I adapted this from an old handwritten recipe in Mom's cookbook. Fresh Cherry Bread with Chocolate chips and Walnuts 2 cups unbleached flour 1 cup sugar(I use organic raw) 2 large eggs 1/2 cup vegetable shortening 1 tsp. vanilla 1 tsp. salt 1 tsp. baking powder 1/2 tsp. baking soda 1 cup mashed bananas 1 cup chopped fresh cherries handful of chocolate morsels 3/4 cup chopped walnuts Preheat oven to 350 and grease and flour 9-inch loaf pan. In a small bowl blend flour, baking powder, baking soda, and salt and set aside. Mix sugar, eggs, shortening and vanilla until creamy, add bananas and blend well. Blend in dry ingredients until blended and moist. Stir in fresh cherries, chocolate chips and walnuts. Pour into prepared loaf pan and bake for 55 minutes or until toothpick inserted comes out clean. Cool a few minutes and run a table-knife around edges and remove bread, continue to cool on rack.
