I have just recently. Dinner type entrees containing dried fruit. I'm talking raisins, apricots, peaches, bananas....not tomato, avocado, chile types of fruit. Great great stuff. Speaking of tomatoes, I have discovered a wonderful ingredient. Sundried tomatoes in oil. I've always figured these things are over-freaking-rated. Nope. Great great stuff, once again. This will always be stocked in my pantry from now on. Just curious if you all have discovered anything recently or in the past. Obscure or rare, it doesn't matter. Would be interesting to read. S. Guest guest Posted June 12, 2006 Report Share Posted June 12, 2006 One thing I have started eating frequently when I am too tired or uninspired to cook a major meal is couscous, zizzed up with some lemon and herb couscous seasoning or frankly with any herb and spice mixture that takes your fancy. Then I dice up cucumber, baby hass avocado, thinly sliced radish, quartered fresh strawberries, halved black olives, slivers of marinated garlic cloves, together with some diced feta or haloumi cheese or tasty firm tofu (the last one I tried was smoked tofu with almonds and it was yummy), all liberally sprinkled with fresh lime juice and crushed ground rainbow peppers. Takes all of 5 minutes to make and the mixture of strawberries and avocado with lime is a fabulous one which I only discovered by accident. I've also started eating pickles which I used to think I didn't like. My current favourites are called Banderillas which are Spanish and a selction of pickles on a cocktail stick - gherkins, olives, onions, sweet pepper and hot chilli pepper. They are truly scrumptious. One thing I truly cannot bear is sun-dried tomatoes and they seem to be in everything these days so there is no escape, lol. Ain't diversity great?! Guest guest Posted June 12, 2006 Report Share Posted June 12, 2006 Recently I have been more open to trying dishes that are savory or spicy with the addition of dried fruits, like raisins... but also adding ripe fruits, like apples or pears. In the past these dishes sounded so odd or gross to me. Might be because I wasn't raised eating like that, and in our home fruit went with only sweet desserts or fruit salads. I find recently I have been combining foods I would never have dreamed of eating together. This started one weekend away when I turned up at the venue we were staying to find that no provision had been mafe for a vegetarian and I was faced with a plate of overcooked cauliflower and undercooked boiled potatoes. Fortunately we had stopped off at the supermarket on the way there and I had bought avocadoes, strawberries, bananas and limes. I really enjoyed the combination and refined it further when I got home by devising the 5 minute couscous dinner. This comprises couscous flavoured with some lemon and herb couscous seasoning (or frankly any favourite herb/spice combo)with diced cucumber, baby Hass avocado, sliced radish, quartered fresh strawberries, halved black olives, slivers of marinated garlic cloves and some diced feta or halloumi cheese, or firm tofu (I used some smoked tofu with almonds last time which was excellent), liberally doused with fresh lime juice. Another thing I have discovered recently is smoked paprika which adds a lovely smoky spicyness to food. I told Donna to get some and now I see she has PT using it too so it seems to be infectious. One thing I really cannot bear is sun-dried tomatoes and they are in everything at the moment so I spend all my time picking them out of my food, LOL. I actually just purchased some tri-color couscous recently (sundried tomato and spinach). Great stuff. I like adding bell pepper and cilantro to it. I'll have to try some of the other ideas as well. That has now and forever changed and boy does that open up a new world of cuisine. Always kind of cool to experiment in the cooking world.
