Guest guest Posted June 13, 2006 Report Share Posted June 13, 2006 Bruschetta 1 Italian bread loaf (16 oz.), cut into 16 slices 2 tsp. olive oil 2 cloves garlic, minced 4 plum tomatoes, seeded and chopped 3 TB chopped pitted olives 2 TB chopped fresh basil 1/4 tsp. ground black pepper 2 TB grated Parmesan cheese 1. Preheat broiler. Place bread slices in a single layer on a baking sheet; broil until lightly toasted, about 1 minute per side. Set aside. 2. In a small skillet, heat oil over medium heat. Add garlic; sauté for 1 minute. Add tomatoes, olives, basil and pepper. Cook, stirring, until mixture is heated through, about 3 minutes. 3. Top each bread slice evenly with tomato mixture; sprinkle Parmesan on top. Return bread to broiler; cook until cheese begins to melt, about 2 minutes. Serve warm or at room temperature. LOL Kinda like when I make fresh basil pesto.
