Guest guest Posted June 15, 2006 Report Share Posted June 15, 2006 This is such a good recipe. Here in our area we use Walla Walls Sweet onions, but I have made it with Viadlia or Texas Sweets too. The Walla Walla onions are just now beginning to be harvested. They are still quite small, but it's hard to wait for them at this time of year. Man I can eat them just like an apple. You can add spices to it but i liked it as is, we had it on toasted bagette slices and a glass of white wine. You can do so much with this, dip, spread, add to a plain oil vinegar dressing..try it your way. 2 lbs. onions or shallots, diced finely sea salt freshly ground black pepper 3 tbsps extra virgin olive oil Saute onions or shallots and a pinch of sea salt and freshly ground black pepper in extra virgin olive oil for 40 to 45 minutes at very low heat.
