A couple of weeks ago I had a recipe I was going to make (black bean burgers) and I've just this past week gotten the last ingredient I needed (come to find out my eggs froze and cracked in the back of the fridge - had to get new ones). So I realized that I have no idea where the recipe was or where I got it. Sure enough it took me nearly 1 to 2 minutes to peruse the files and voila....presto...bingo was his name ohh.. Black Bean Burgers 2 (15 oz) cans of black beans, rinsed and drained 1 small onion finely chopped 2/3 cup breadcrumbs 1 clove garlic minced 1 tbslp fresh cilantro or basil (your choice) finely chopped 1 tsp. ground cumin 2 eggs (I use 2 egg whites) beaten 1 sm. jalapeno pepper minced (optional) salt and pepper Place beans in bowl and mash with a fork. Add remaining ingredients and mix well. Shape into 6 patties and fry in a little oil on medium heat a few minutes on each side. When i read a list like the one below of all the recipe names, i feel wonderfully blessed to be a vegetarian with all the variety of food to try and enjoy!
