Meatos Recipe

This was a favorite recipe that my grandmother would make when she came to

visit us, which was often. Smile. Love to eat it right out of the oven hot,

but it is also good on a sandwich, sliced and put on hearty homemade Whole

Wheat Bread with Mayo/Veganaise the next day. It is good on crackers also.

Meato's

1 cup Peanut Butter

2 c. Petite Diced tomatoes with Green Chilies or Jalopeno's

1 tsp. Sage

1 c. Onion, diced

1 tsp. Salt

3/4 c. flour(more or less)

 

Mix all the ingredients, adding the flour until it is thick like cornbread

mixture. Put into a sprayed casserole dish. Bake @ 350 for about 1 hr.

Check middle for being done.

This is really different sounding to me, but very cool!

I wonder why it is called " meatos " ? *lol*

I will have to try this because I love peanut butter with

sauted onions for a sandwich. Now do you use regular

commercial brands [or non-natural] peanut butter in

this recipe, or do you use a natural no-additive peanut

butter with good results? I use Adam's brand which has

only peanuts, a little peanut oil and some salt.

I was raised on Jif... ;)

Any peanut butter will work in it. I don't know if this was a recipe my

grandmother came up with on her own and named or if she found it in a cookbook

with that name. Sorry. Despite the unusual combination of ingredients it is

surprisingly VERY GOOD. It is great as either an entree or a sandwich spread.

Try it and let me know what you think.

I spoke with my mom this week, about where my grandmother got this recipe.

She said that when my grandmother became a Seventh Day Adventist(they

encourage a vegetarian diet), one of the dear ladies in the church shared

this recipe with her. Meat substitutes were not around at that time. This

became a staple in their house, but they made it without the green chilies

or jalopenos added to the tomatoes. I like the heat so I make it with those

added to the tomatoes. Feel free to make it with just reg. canned diced

tomatoes thought if you don't like the heat.

I hope you get to try it.

can't do the reg diced toms. and chopped green chilies- cos as far as I can

see- we can't get them here. I will check the mexican food area next time we

get for groceries though. And I will try a little more flour too- I added a

cup at least I would say- but of course the variety/brand of tomatoes would

make the difference too. :)

Not sure if this is a good or bad thing to write- but our dog just loves it!

lol She can be quite picky but she really scarfed this right up! lol :)

I look forward to others' reviews as they try it.

Yes I find the canned chopped green chilies in the mexican section of the

grocery store. If you like it hotter though, cut us some of those pickled

jalopenos instead in it. You're welcome. LOL about the pup.

That's so cool. Thanks for telling us

about how you came to this recipe.

It must make it more special to you

since it has so many fond memories

attached to it from time spent in the

kitchen with your Grandmother. :)
