Crock Pot -- Grandma's Vegetarian Chili

This is a simple crowd pleasing recipe that can sit in a

crock pot/slow cooker until it is time to serve.

1 can (19 oz.) black bean soup

1 can (15 oz.) kidney beans, rinsed and drained

1 can (15 oz.) garbanzo beans (chick peas), rinsed and drained

1 can (16 oz.) vegetarian baked beans

1 can (14.5 oz.) diced tomatoes in puree

1 can (15 oz.) whole kernel corn, drained

1 onion, chopped

1 green bell pepper, chopped

2 celery ribs, chopped

2 cloves garlic, chopped

1 TB chili powder, or to taste

1 TB dried parsley

1 TB dried oregano

1 TB dried basil

 

In a crock pot/slow cooker, combine black bean soup, kidney beans, garbanzo

beans,

baked beans, tomatoes, corn, onion, bell pepper and celery.

 

Season with garlic, chili powder, parsley, oregano and basil.

 

Cover and cook for at least 2 hours on HIGH heat setting.

 

Serves: 8.
