Pastelitos de Boda 3/4 cup butter or margarine at room temp 1/2 cup powdered sugar 2 tsps. vanilla 2 cups all purpose flour 1/4 tsp. salt 1/2 finely chopped walnuts 1/4 cup heavy cream additional powdered sugar (I add cinnamon and cardamom to the additional sugar) Cream together butter and sugar, add vanilla and mix. Add flour, salt and nuts. Add cream and knead lightly on a floured surface. Form into a roll 2 1/2-inches in diameter, roll up in plastic wrap and chill overnight. With a sharp knife (I use a sushi knife), cut into 1/4-inch slices. Place on ungreased cookie sheets and bake at 375 degrees for 12 to 15 minutes or until delicately browned around the edges. Remove to wire rack for cooling. While still hot, roll the cookie into powdered sugar and shake off. *Note - you can add cinnamon and or cardamom into the powdered sugar for a different taste to the topping.
