Guest guest Posted August 10, 2004 Report Share Posted August 10, 2004 Don't forget all kids love pasta (well, you'll know best about the littlest one!) so wholemeal pasta would be great - in shells or spirals or something for less messy eating, tho it's not as much fun. And for your five yr old you can get some great veggie franks so that a quick meal is not so far away when hungry! Don't forget tofu for yourself too (did you mention that). We like to buy visit the local fruit and veggie stand periodically and dice up most of the veggies and stick them in the freezer for quick use later and to make sure we can still have our favorites available even when the fresh stuff at the stores looks too sorry to take home. I also like to whiz up a blenderfull of fruit smoothie, pour out a glass to have right then and stick the rest in the freezer thaw out and have later when I don't feel like having to clean out the blender. Canned beans, corn and tomatos are a must in our house. They're tasty, nutritious and help fill out a number of dishes. Creamed spinach is great for adding to leftover portions of soups and pasta dishes that aren't quite big enough to make a full serving by themselves. Rice or barley is also good to have on hand. I like to keep hummus, wheat crackers and cheese around for snacking as well as yogurt and carrots with dip. Don't know how much hummus would appeal to the kids, though, or the creamed spinach for that matter. Just try to have the vegetables you know they like on hand, fresh canned or frozen as much as possible to cook with, I guess. :^) ~Helyn Highwater Where are we going and why are we in this handbasket? I am having veggie pizza tonight for dinner, then I will try a vegetable lasagna tomorrow, but realized there must be things I could keep on hand.
