I don't know as much about type 1 (my dad had type 2), but it could be something to look into, even if you don't plan to go totally vegan. A newly diagnosed Type 1 will usually produce some insulin for awhile after diagnosis until the immune system finishes its job. They will require less outside insulin at first but eventually their pancreas will stop working. So, the only way Type 1 diabetics can stop taking insulin is if they get a pancreas transplant, which is usually done only in conjunction with a kidney transplant. There are also experiments going on with transplanting islet cells (insulin making cells) rather than an actual pancreas but I don't think there are any long term results out on that yet. I think that the best benefits of vegetarianism for a diabetic is that they're consuming less cholesterol & saturated fat, which is always a good thing, especially since we're more prone to heart disease. Last night I made my first real vegetarian entree (not counting stuff like pasta or salads, which everyone including omnis make all the time) from TVP. I made a TVP " meat " loaf. I made a big mess, but it came out great. Had it for lunch today, and also dinner. It was much better at dinner, after it had been in the fridge for close to 24 hours and firmed up. I was very pleased with it, especially since my last attempt at a big meal was a disaster (tried to make seitan). -- Liz

Why no onions, > garlic, or mushrooms? I have always wondered. > > Veronica ~~~~~~~ Hi Veronica, Thanks for your comments {I almost did not see that you were responding to me}. I am not a Jain and I am not an Asian Indian, ifever I gave that impression out. To satisfy a bit of your curiosity, Jainism is an old religion whose philosophy is derived from the teachings of Lord Mahavira. Among other things, it adheres to " ahimsa " or " the endeavor to avoid the act of hurting or killing " . So strict adherents go to all extremes not to inflict any harm to creatures, even to microbes~~so they have to use mouth covers such as that are used in doctor's operating table in order not to extinguish microbes in the process of respiration. Or they would refrain from flying in an airplane for the same similar reason. (If interested, for a more practical application of " ahimsa " , I refer you to www.anandamarga.org <http://www.anandamarga.org> ) Now I am an " adherent " to Jain vegetarianism which is a diet that excludes eggs, onions, garlics and mushrooms while basically vegetable-based. For expediency, I refer to it as Jain veg. since it is easier for others to understand what I am refering to when making specifications in food orders at public situations~~in eating at restaurants or orders when traveling on air and at sea. In our practice it is part of guidance to prepare and cook food at home and thus eating in public places like restaurants are on negligible ocasions only, especially if you kow the food materials and the preparers and cooks follow a Cosmic-ideative lifestyle. And oh yes, why not onions and garlics? I am cognizant of the medicinal benefits of garlic for those who will require their use. But for spiritual aspirants (meditators), garlic and onion, which are stimulants (stimulates the mind), are eschewed. They are so toxic to the body that is why the body would immediately try to expel it out through the pores, armpits and breath. As for mushrooms, they do not have chlorophyl to manufacture their own food so they depend on " dead " matter for them. BTW I am new here and looking forward to a wonderful interaction. Guest guest
Hi I am Debbie from Marianna, FL. I have been a vegan since May 1. I went this way because of having 9 types of arthris and fibermyalgia. I have seen an improvement in my health since I change my life syle. I now can walk with out my cane or walker. I am not hurting like I was. I quit taking any of my prescriptions as of May 1 also and have gone herbal. I have lost 35 lbs also since then. I LOVE BEING A VEGETARIAN. I love watermelons. We grow watermelons, cantalopes and honeys dews. I grow melons all thru the summer here. We home grow 9/10 of our foods here. Debbie improve7211 wrote: Hi All, I'm April. Guest guest
Hi I am SKY........ in St. Paul, Minnesota. I am a lacto-ovo vegie. I just joined today. I am eating a Boca burger wrap as we speak...... LOL I don't like cooking much for just myself. So I go a little weird with my stuff. Most is portable. The Boca burger is wrapped with a sprouted hi fiber( 14 grams) tortilla and then I put in a big handful of cilantro and parsley, with a heavy dose of a spicy and hot dijon mustard. Maybe I will get interested in cooking again....... LOL Hope to get to know this nice group better.
