Guest guest Posted July 6, 2006 Report Share Posted July 6, 2006 Heat a heavy bottomed sauce pan and saute: 1 Tbsp olive oil 1 medium onion, chopped (about 1 cup) 2 cloves of garlic, smashed & chopped When onions are soft and beginning to brown, add: 2 cups of canned plum tomatoes, chopped 3/4 cups water or vegetable broth 1/2 tsp salt 1/4 tsp black pepper 1 bay leaf Simmer over low heat, uncovered. stirring occasionally for about 20 minutes. Add a little more water or broth if needed. Don't let it scorch. Remove the bay leaf and add: 1/2 tsp oregano 1/2 tsp basil Cook for 5 more minutes. Sauce should be thick. You can put it in a blender or food processor to make it smoother.
