Mexican restaurants can be the best places to eat as a vegan, especially if you have nonvegetarians in your party. I usually look for the sides - beans, rice, warmed corn tortillas, salsa and maybe the guacamole - to make a meal. Usually have to be specific about no cheese, but otherwise it's a great meal for very cheap. Sounds like you have an extra good place with all the other options. (I believe there are some vegan enchilada recipes in the files of this group, too, should you be creating at home...) I feel the same way about my stuff not being used for nonvegan foods. You've been vegetarian long enough where maybe just the smell of meat is repulsive. It wouldn't hurt them to eat vegan in your house, only nonvegan while eating out. Just in this group's files, there are so many vegan recipes for breakfast, lunch and dinner. If they're open, you can add to their repertoire even if they continue to be nonvegetarian.
