Guest guest Posted July 18, 2006 Report Share Posted July 18, 2006 I have tried a few different zucchini bread recipes over the summers when I had an abundance of zucchs. My mother hated the stuff [zucchini bread] and used to throw the loaves my Grams made her out the car window on the drive home. Isn't that aweful!? *lol* I love zucchini bread, but know better than to ever bake it for my mom when she visits because I know what she'd do with it! Maybe it was my Grams' recipe. I know she made it very basic. A few summers ago I baked several recipes and had my family [not my mom] taste them all to tell me which they liked best. This recipe got the " yay " votes: Sweet Zucchini-Spice Bread 2 cups grated zucchini 1/2 cup honey 6 Tbs, melted butter 1/2 tsp. vanilla extract 1 cup unbleached white flour 1 cup whole wheat flour 1/2 tsp. salt 2 1/2 tsp. baking powder 1/4 tsp. nutmeg 1/2 tsp. allspice 1/2 tsp. cinnamon 1/4 tsp. ginger Place grated zucchini in a colander to drain for a few minutes, and then squeeze out as much moisture as you can with your hands; this helps the batter to not be too moist. Beat the honey with an electric mixer until it is whipped and turns light yellow and not clear anymore. Add in the butter, eggs and vanilla and stir in to combine well. Sift together all the dry ingredients including the spices. Add some of the dry ingredients to the honey mixture, then some of the zucchini, stirring well ~ but gently~ between each addition until all is combined. Pour batter into a greased bread loaf pan. Bake at 350 degrees for 35 to 45 minutes. Guest guest Posted July 18, 2006 Report Share Posted July 18, 2006 My husband says this recipe is better than his mother's (GASP!) 3 C flour 1 tsp salt 1 tsp baking soda 1 tsp baking powder 3 tsp cinnamon 3 eggs or sub 1 C veg oil 2 1/4 C white sugar 2 C grated zucchini 1 C chopped nuts (opt) 1. grease and flour pans 2. Preheat oven to 325 3. Sift flour, salt, baking soda and powder, cinnamon together 4. beat eggs & oil. Add sugar. Add sifted ingredients and beat well. 5.
