Smoky Tomatillo Chipotle Salsa

 

5 tomatillos, husked, washed & halved

3 garlic cloves, peeled

2 or 3 chilpotle chiles in adobo sauce

1/4 cup water

1/2 teaspoon salt

 

In a large skillet spray with cooking spray amd cook the

tomatillos cut side down along with the garlic over medium heat

for about 5 minutes. Turn tomatillos over and cook about 7 more

minutes until softened. Let the tomatillos & garlic cool slightly.

Add them to the food processor along with balance of ingredients

and puree coarsely.

Pour contents into a bowl. Adjust seasoning, and add more salt if needed,

squeeze of lime juice if desired. I usually add some chopped cilantro and

chopped onions.

This looks so yummy. If it wasn't so darn hot out I would go to the

store right now for those tomatillos. Where do I find the Chipoltle

chilies in adobo sauce. Thanks for explaining how to cook the

tomatillos. Our local stores do not carry them and other family

members and friends have been asking about them.

If you live in a hot climate, tomatillos will probably grow like weeds. I

have even grown them here on the Northern California coast, but they need more

heat to be really prolific.
