They were very thin, sweet and wonderful. I believe I rolled them in a cylinder and sliced. I've tried other similar recipes but none have been quite right. The other cookie, a molasses cookie, was my Grandmother's specialty, and was very thin (not as thin as the lace cookie). Pepperidge Farm used to make one that was exactly like hers but they discontinued it, despite me trying to buy every bag they made. Want cookies. Really want cookies. Lotsa cookies. Crunchy cookies. I have a nice set of 3 pillsbury cookie cookbooks so if it is to be found I bet it is in there. Now as to the molasses cookie recipe, I have several I love and both are very different. My mother's old-fashioned recipe makes big soft pillowy molasses cookies, but that doesn't sound like what you are looking for. You might want to give it a try though anyway. I love them and the recipe is in our dessert files in the cookie folder. The other recipe I have which might be more what you are looking for is for a cookie called Ginger Crinkles. It has a very molassesy flavor, and trust me, these cookies are killer. Everyone loves them that has tried the recipe, and I was even able to make them vegan so easily when I had some guests visiting with a vegan son. This recipe should also be in the cookies folder, but if you want either one and cannot locate them, I will gladly repost the recipes.
