I am going to try vegetarianizing a crock-pot recipe I found over on an omnivore crock-pot cooking group on . slowcooker/ The recipe is for a baked ziti and the claim is you don't have to boil the pasta and it will come out perfectly, so we shall see. If it comes out well I will post it here tomorrow when I fix it vegetarian. Ought to be pretty easy to do. Maybe replace the chicken with chickpeas and use veg broth. I'm going to serve Hariatma's Raaitaa with it. Looking forward to it! Guest guest Posted July 22, 2006 Report Share Posted July 22, 2006 Now that I have been converted and see the light that is tofu, tonight's dinner is Tofu Cacciatore from the South Beach Cookbook, along with French Bread (it is on its first rise right now) and a tossed salad, melon for dessert. Tofu Cacciatore (South Beach Cookbook) 1 pount firm, light tofu, cut into 1/2 inch slices 1/2 medium onion, sliced 1/2 red bell pepper, sliced 1/2 green bell pepper, sliced 2 tablespoons white wine 1 large clove garlic, minced 1 teaspoon dried basil (I'll use fresh, about a tablespoon, minced, probably more, lol) 1 teaspoon dried oregano (Same as above, fresh) Pinch allspice 1 can (28 punces) stewed tomatoes, drained (again, fresh tomatoes, I have about 40 pounds of them...er...a bit over 18 kg) 2 teaspoons tomato paste Rosemary for garnish (Oh pleeeeezzzzzzzzze. Plate it up and eat it, forget the cutsie stuff. This isn't Hell's Kitchen, just hot enough to be.) Squash and pat tofu dry. Saute peppers, onion and garlic in olive oil spray. (yeah, right, toss a spoonful of olive oil in the wok...) Cook, stirring frequently about 5 minutes. Add the wine, spice, herbs, tomatoes, tomato paste and cook about 15 minutes. (Oh sure. That sauce is already in the crockpot and I have enough cooking to freeze 6 meals total.) Heat another skillet coated with olive oil cooking spray (me or the skillet?) and cook tofu over medium heat about 3 minutes, or until lightly browned on both sides. Place the browned tofu slices in a 13 inch by 9 inch baking dish and cover with tomato sauce. Bake 1 hour or until cooked through. Uh huh. Or make it my way. Saute peppers, onion, garlic till transluscent. Toss in crockpot. Dunk tomatoes in boiling water from kettle,remove skin, throw skins into bowl for compost, chop tomatoes. Dump in crockpot. Toss in tomato paste, herbs, allspice, wine. (At this point I also threw in black olives because we love black olives.) Walk away from the crockpot. Ignore it. It doesn't heat the kitchen and the cats cannot get into the thing. (Yet.) Squash tofu, dry it, sprinkle with mixture of oil, basil, oregano and whatever else is looking good that the deer and rabbits haven't eaten. Throw it in the fridge to wait till 'tis time to assemble dinner. Then fry, toss in baking dish, throw on sauce, bake till done. Eat. Why oh why do cookbooks try to make the easy look like it is sooo complex?Want to know how to make puff pastry? water, butter, flour. Mix paste, chill. Roll out paste, put on chilled slab butter, fold paste over, roll. Chill. Roll, fold, chill. Roll, fold, chill. Voila.
