PB is rich in omega 6, which we tend to already get alot of, but almond butter is rich in omega 3. It is hard to find good nut butters that you don't have to stir and stir that oil layer on top, until it is mixed in well, unless you are near a store that has one of those machines that does it right there. Smuckers is the one I buy when we are away from home, but it does require some vigorious stiring to mix. It is good though. Sometimes I pour off some of that oil though. It's kinda like Tahini, which is also a vigorous stiring to mix. A week is better... and for Tahini about a month. It's still not fun, but you can get a few good swipes in before the oil is in danger of overflowing the top! Also, the almond butter is better than the pb. I won't have a lot of electricity (off gird) where I am moving, so I'm going to have to find a hand nut grinding method... maybe Lehman's... I have springs, so I'll work on developing one of those first. Eventually I'll add some solar panels, but not enough to have a lot of electrical appliances. For the next 2 years I'll be on and off the land, working to pay it off, then I'll be there for good, building my house and growing my food! Can't wait! Figuring out what you can produce yourself... and in some ways being a vegetarian is a little more challenging in this regard! Beans take more room and time to grow than, say, chickens, for protein. Animal fats are also faster to " grow " than most vegetable fats. I find it exciting to figure this stuff out and am looking forward to putting it into practice! I bet you find some aspect of this that interests you and grabs you... even if it's the vegetarian cooking of what your husband produces! Good luck to you too!
