mocha cake? Liz :)

Last year my daughter and I made a mocha cake with mocha frosting for one of

her friends birthday's, she read the amount of instant coffee to add to the

frosting instead of 3 tsp we added 3 TBS it was very coffee flavored.

You have to try this one delicious recipe.

It is an old family favorite on my dh's side,

and it is out of this world. Using soy milk

I can make this vegan, too.

 

Tropical Mystery

 

Sift all of these dry ingredients together in one bowl:

3/4 cup sugar

1 cup all-purpose flour

2 tsp baking powder

1/8 tsp salt

1 tsp ground cinnamon

1/2 tsp ground allspice

1/8 tsp ground cloves

1/2 tsp ground nutmeg

 

In a small bowl, combine these next three ingredients:

3 Tbs vegetable oil

1/2 cup soy milk

1 tsp vanilla extract

 

Make a well in the dry ingredients and then pour the soy

milk mixture into it; blend with a fork until smooth. Pour this

into an ungreased 8 inch square baking pan.

 

Mix together this topping and sprinkle over the batter:

1/2 cup brown sugar

1/2 cup sugar

4 Tbs cocoa powder

 

Pour 1 cup of very hot coffee over the top of everything and bake

at 350 degrees for 40 to 45 minutes.

 

The coffee bakes down through the powdery sugar cocoa

layer and pulls it below the cake batter to make a smooth

and rich mocha pudding underneath the spice cake.

So out of this world good even if you don't like coffee. :)

Where's the " tropical " in this recipe?

Or is that the " mystery " ? LOL.

 

The mocha pudding it creates at the bottom sounds awesome.

I've yet to try these self-pudding-creating recipes where

you dump liquid on top of everything else. I should.

That does sound really good, although chocolate would

make it even better. I do like spice cake/cookies a

lot. I might have to make this and bring it into

work. I use my co-workers to test any of my baking

attempts!
