Cranberry Pie

This is always such a surprise

when served. I'm digging out my

goliday recipes, can you tell?

 

 

Cranberry Pie

 

2 cups cranberries, cut in half

1/2 cup brown sugar

1/2 cup chopped walnuts

2 eggs, well beaten (large)

1 cup sugar (I use raw)

1 cup all purpose flour

1/2 cup butter or margarine, melted

1 pie crust for 10 inch pie pan

 

Combine cranberries, brown sugar and walnuts together.

Spread the mixture into the bottom of the prepared pie

shell. Beat eggs well; gradually add the sugar;

continue beating. Stir in flour and melted butter.

Pour batter over the berries in the pie shell. Cover

edges of pie crust with foil and bake at 400F for 15

minutes. reduce heat to 350F, remove foil and bake 35

minutes longer. Serve with soy or regular ice cream.

LOL Yes with this one. Do you have a source for fresh or frozen cranberries

this time of year? They don't even have them frozen here, this time of year.

okay, where would i find whole cranberries at this time of the year? would

frozen do? never saw canned berries either.

 

thanks, i'll try this one for a pot luck at our weavers guild pot luck this

weekend if i can find the cranberries.

I have no idea where you live. I'm in LA and I can

pretty much always find these things. I dug this

recipe out since I found a bag at Trader Joes.

Frozen thawed out are find. Don't use canned though.

If you can't find the berries yet just save the recipe

for the autumn/winter. I'm sure you will enjoy it.
