Totally unrelated to your recipe... but I tried a dish that had gluten at a Chinese restaurant about a month or so ago, and I didn't care for the flavor of the gluten bits. This surprized me because I wasn't expecting them to have any flavor except what the sauce and veggies impart to the dish, much like when you eat tofu. But this gluten had a weird sort of chemically aftertaste, so I was wondering if that was typical to store-bought gluten or maybe if you think I got a bad batch? I ended up just eating the veggies and rice, and picked those gluten bits out. I won't be put off trying gluten again though, just because I didn't like it the first time around. That would not appeal to me at all. I like gluten very much and use it many different ways. I buy the Worthington Choplets, but my aunt makes her own and it is sooooooo tender. I loved it. I need to call her and get her recipes to share. I put it in stir fry, casseroles, bread and fry it, etc... Which book did you buy? I'm glad you are going to try it. Let me know how it goes. I had a feeling this batch might have been either old or bad since I don't think many people order this dish around here where I live, so perhaps it just wasn't fresh anymore. I bought the cookbook 'How to make all the meat you eat from wheat'.
