Apricot Bread

This is very good. I had a slice hot from the oven.

Be careful, it's painful if a hot apricot gets stuck on your lip.

 

Apricot Bread

 

1 stick butter or margarine room temp (1/2 cup)

1 cup sugar (I use raw)

3 large eggs

2 3/4 cups flour

1 1/2 tsp. baking powder

1/2 tsp. baking soda

1/2 tsp. salt

1 1/2 tsps. cinnamon

2 cups fresh apricots, chopped, or 1 cup chopped dried reconstituted in hot

boiling water

2 Tbls. orange juice

1 tsp vanilla extract

 

Preheat oven to 350 degrees and grease and flour a 9X5-inch loaf pan.

Cream butter and sugar. Add eggs one at a time, beating well after each

addition.

In a separate bowl mix dry ingredients together.

Add dry ingredients to creamed mixture alternately with the apricots,

beginning and ending with

the flour mixture.

Stir in orange juice and vanilla.

Pour batter into prepared pan and bake for 50 to 60 minutes..

Test by inserting wooden toothpick and making sure it comes out clean.

Cool 10 minutes. Remove from pan and cool completely on wire rack.

 

 

 

 

Why do hippies grow avocado seeds?

No one knows, back in 1972 it was hard to find

a hippie windowsill that didn't have an avocado seed

sprouting in a jar. Some hippies credit this phenomenon

with ending the war in Viet Nan.

I love your hippy handbook quote thingie

about the avocado seeds; we used to do that.

I even potted one and tried to grow some fruit,

but it didn't work out for me. I also would have

a jar with a potato plant on my windowsill. :)
