What to make for dinner (QUICK!)

Dinner is in one and a half hours, all I have on hand is minute rice

(brown and white), one eggplant I need to use, fresh green beans,

yellow, red, and green bell peppers, a mango, and some odds and ends.

What shall I make that is fast and easy and delicious?

Slice the eggplant about 1/4 " thick, put it in a tupperware container with a bit

of flour or cornmeal, put the lid on, and shake it. Fry it in some olive oil

till it's brown. You could steam the rice to go with it, and throw in little

pieces of the green beans and bell peppers. Mango for dessert- I wish I had a

mango, that sounds good. :)

i always keep thai curry paste and cans of coconut

milk on hand for quick dinners (you basically mix the

curry paste with the coconut milk, add the veggies and

cook until tender). these veggies would be excellent

in a thai curry with the steamed rice. mango for

dessert.

I would cook the rice in a little veg broth if I had it.

Saute the veggies and drizzle a bit of soy sauce

or Bragg's liquid aminos and serve over the rice

topped with slivers of the mango. Or you could eat

the mango for dessert, either way, yum.
