Guest guest Posted August 15, 2006 Report Share Posted August 15, 2006 Dinner is in one and a half hours, all I have on hand is minute rice (brown and white), one eggplant I need to use, fresh green beans, yellow, red, and green bell peppers, a mango, and some odds and ends. Guest guest Posted August 15, 2006 Report Share Posted August 15, 2006 Slice the eggplant about 1/4 " thick, put it in a tupperware container with a bit of flour or cornmeal, put the lid on, and shake it. Fry it in some olive oil till it's brown. You could steam the rice to go with it, and throw in little pieces of the green beans and bell peppers. Mango for dessert- I wish I had a mango, that sounds good. Saute the veggies and drizzle a bit of soy sauce or Bragg's liquid aminos and serve over the rice topped with slivers of the mango. Or you could eat the mango for dessert, either way, yum.
