Huevos Rancheros

Down here in Texas, we serve this with refried beans

and papas con chilis...

My favorite, favorite, favorite breakfast. Hubby

prefers migas though.

mmmmmm..How bout some " papas con juevos " topped with salsa and velveeta

bundled in a tortilla. I use to eat this all the time. I love Texas.

Yes, potato and egg tacos are yummy.

As a kid I would always eat one of these and a bean,

cheese and potato taco for breakfast.

Ooh, I just love talking about Texas breakfasts...It's

making me very hungry for something other than my

usual bowl of cheerios.

Hi Allison.

Did you hear that a group of students in Austin, TX put in an official

request (I don't remember the actual legal term used) to make " chips and

salsa " the Official State snack for Texas. They are suppose to rule on it

soon. It sure sounds suiting to me.

I'm sure I did hear it...Or I should have, especially

since I live right outside of Austin:) OH YES! That

is fitting. Mexican restaraunts around here are a

poor student's dream...All the free chips and salsa

you can stomach - then take the meal to go and eat it

later.

Huevos Rancheros

The most authentic way to make huevos rancheros is very simple, eggs

and salsa, served with corn tortillas. They are a Mexican tradition.

 

4 eggs

1 cup fresh salsa

4 corn tortillas

Oil

Salt, to taste

Cheddar cheese OR cheese blend, shredded, for garnish

 

Preheat oven to 500º F.

 

Coat each tortilla in oil and place on cookie sheet. When oven is ready,

cook for approximately 5 to 10 minutes, depending on how crisp you like

your tortillas.

 

Heat oil in small frying pan, cook each egg slowly on one side until whites

are firm and yolks are runny.

 

Salt to taste. Place one egg on each tortilla.

 

Heat salsa in the pan on high heat for about 2 minutes or until extremely

hot.

Pour 1/4 cup over the top of each egg which will further cook the top of the

egg.

 

Sprinkle with shredded cheese and let it sit for about 1 minute before

serving.

 

Makes: 4.
