Sounds like an amazing trip! Where did you go,

what did you see and what did you find veggie

to eat there that was good?

thanks!! i organize at least one hiking/adventure trip to a national

park every year; this one had about 17 people total and it was,

indeed, amazing! :)

most of the time i ate clif and odwalla bars. for dinner, i got boca

burgers, portobello burgers, or an actually really good vegan burrito

from the restaurant by our cabins.

 

our last night there, a few of us decided to splurge and go to a nice

restaurant in a fancy hotel that overlooked the area. there was

absolutely nothing veggie on the menu, so i asked if they could do a

veggie plate for me. the waiter looked skeptical, said they could

probably do a portobello burger or something, but said he'd ask.

well, the chef, for some reason, had tofu in the kitchen, and made me

an amazing vegetable plate with balsamic and rosemary roasted

portobellos, veggies of all kinds, and glazed, crispy tofu that

honestly is the best tofu i've ever had. go figure! :)

That sounds like such a blast. Glad you had a good

time and also that you were able to find good things

to eat on the trip. Alaska is somewhere I definitely

want to go to one day. :)

Wow! Your pics are awesome! Makes me want to go

even more now. That is so cool you were able to see

a Bear, too... oh, and 72 degrees is pretty sweet for

touring the artic circle. ;)
