Guest guest Posted August 28, 2006 Report Share Posted August 28, 2006 Dear PT et all, I couldn't get to Minnie's on time When I finally reach hers, the Bhatura was already made and ready to be deep fried However, I am told to just add water(slowly) to Plain Homepride " leavened " flour. Then, watch it rise and knead it to ensure it is " bouncy " and does not stick to the work surface. +++(The secret here is to get the mixture " water and flour " right)+++ Divide the dough up into small cubes. Then, squash it flat with rolling pin till it becomes a round shape. Cover with greaseproof paper(to stop it drying out). Then when you are ready, just fry it in a bath of oil and watch it " ballooned " . +++(The secret here is to fry it with the " correct temperature " )+++. If the Bhatura comes out greasy, then the frying temperature is wrong. If it comes out without any traces of grease, you have got the correct temperature. As long as you maintain the correct temperature(from now on), every single one after that will be nice Sorry I couldn't get the amount of ingredients from Minnie. She does not measure the ingredients at all. She does it by using her " instinct " . We didn't have time to make the Puri. But I am told, it is exactly the same method. The only difference between Puri and Bhatura is ;- Puri is made with " unleavened flour " . Whereas Bhatura is made with " leavened flour " . On my next visit, Minnie will show me how to make " Dosa " (i.e. thin pancake). There is also a chance I may be able to make " Appam " ,also from South India.
