Guest guest Posted August 30, 2006 Report Share Posted August 30, 2006 Sunny Pasta Salad 9 oz. shell pasta, c ooked al denté 1 large fresh pineapple, diced 7 oz. canned sweet corn kernels, drained 2 cucumbers, sliced 1/3 cup + 3 TB raisins 4 shallots, chopped 1 red bell pepper, diced 1/3 cup fresh parsley, chopped 1/4 cup French dressing 1/4 cup mayonnaise OR Miracle Whip salad dressing 2 cups mixed lettuce leaves Cook pasta in rapidly boiling water for 8 minutes, or until al denté. Drain and cool. In a large bowl, combine pasta with next 7 ingredients. Whisk together French dressing and mayonnaise. Pour over salad and toss. Would anyone who knows how to change recipes without ruining them, suggest a low fat, nonmayonaise dressing which could be used? Thank you. To me it is a lot like Best Foods regular mayo, but it is vegan, lower in fat and calories and just tastes better than real mayo. But people that used to prefer using Miracle Whip salad dressing spread before going vegan or looking for lower fat mayo, I have heard, often prefer a different brand of vegan mayo... I think it is the Nasoya or something like that. Maybe someone here that uses the other vegan mayo brand will chime in. But all that aside, you could certainly use Vegenaise in this recipe and have good results. ~ PT ~ Live each moment with balance. However, I have now read that it has to be refrigerated before opening which I didn't do. So maybe I'll try it again and the other vegan mayonaise.
