The pods are chewy & a little fuzzy, probably wouldn't hurt you to eat them but they're not very palatable. Also sometimes I put the frozen pods in a shallow dish of salty water & nuke them a few minutes & pop & eat I bet fresh from the garden they are tasty! Are they hard to grow? Guest guest Posted September 1, 2006 Report Share Posted September 1, 2006 Val, I boil them until crisp tender on the stove top. The pods should be just beginning to split open on their own. The beans should be cooked, but not mushy. When their done I rinse them well in very cold water and serve. I leave them in the pod and let people pull the beans out themselves, sorta like peanuts. No you do not eat the pods. I guess you could if you wanted to, I mean they aren't poisonous or anything, but they are tough.
