You have to rinse them well under cold water and then boil them for a couple of minutes to remove the funky smell. I added broccoli, yellow squash and mushrooms to mine and used some sauce from a jar. The entire 8 oz package is only 40 calories, so you can have a very low calorie meal depending on what you add to it and what sauce you use. I haven't tried using them in a stir fry or soup, just as a replacement for pasta with sauce so far. I don't mind the taste or texture.
