What is your favorite baked dessert?

Hard to choose just one,

but I'll give a short list:

 

peanut butter or oatmeal cookies

(both with chocolate chips)

 

pecan or pumpkin pie

 

and back in my non-vegan days,

I was a sucker for cheesecake brownies

OH yes, Ms.Smith's Mince meat pie is great isn't it. It is a huge favorite of

my husband's especially. I'm glad their version is vegetarian. We were looking

for some at the store this week, but they were out. Boy does it make the house

smell good when it is baking

I am a person that hasn't for the most part learned that it is wise

to measure everything. I usually cook with a handful, a pinch,

about, etc.

 

 

 

My Favorite Baked Dessert is:

 

Depression Cake (Butter, Milk and Egg-Free)

 

 

 

1 C. Brown Sugar 2/3 C. raisins

 

1/3 C. fat substitute 1 tsp. baking soda (aluminum free)

 

1-1/4 C. water 1 tsp. salt

 

1/2 tsp. nutmeg 2 Tbs. Cold water

 

1-1/2 tsp. allspice 2 C. sifted flour

 

1/2 tsp. cloves 1-1/2 tsp. baking powder

 

 

 

Boil together brown sugar, fat substitute, water, nutmeg, allspice,

cloves and raisins. Cool. Mix baking soda, salt and cold water.

Add to cooked mixture after it has cooled. Gradually stir in flour

and baking powder. Mix well. Pour into sprayed and floured 8 "

square pan. Bake at 325 degrees F. about 50 minutes.

From the More With Less cookbook

 

Wacky Cake Master Mix

 

The cake mix says it makes 4 cakes, but I always get 5.

Mix it up and store in an airtight container in the fridge.

Now, you can use regular baking chocolate and it's good, but I prefer to

splurge and buy Ghiradelli's dark cocoa, you just can't beat the taste.

 

Ingredients:

7 ¼ C flour

1 C cocoa powder

2 ½ tsp salt

5 tsp baking soda

5 C sugar

 

To make 1 cake:

 

Add 2 ¾ cup mix to 1 C cold water, 5 T oil, 1 tsp vanilla, 1 T vinegar.

 

Grease a pan, bake 30 min at 350 degrees.

I dust with powdered sugar and pour a little milk over individual portions.

You can whip up a cheap icing with milk and powdered sugar if you want.

For frosting, my mom used to mix up margarine, powdered sugar, and cocoa. We'd

just eat it out of the bowl. That actually sounds good right now. I think I'm

going to make some as soon as the kids take their naps. :) Or cookie dough...

decisions, decisions. Won't that be nice for my husband to come home to? Wife in

pajamas, eating frosting and watching Quantum Leap. I dunno how he keeps his

hands off me.
