I just wash them and wrap them in aluminum foil and stuff the whole crock pot full. Cover and cook on low over night or on high for 4 hours. The skin and the whole sweet potatoe will be so sweet and tender. They are wonderful to just mash and serve or to make a sweet potato casserole with. I know there have been some things, I used to not care for, like Brussels Sprouts, that are very good for you, that I just decided were so good for me, that I kept eating them different ways and now I love them. You're so right about Sweet potatoes, they are such powerhouses of nutrition. They seem to have an extra good flavor prepared like this. I also love to peel and cut them in large fries, put in a zip log bag with a little cooking oil and salt, toss and pour out onto a Jelly Roll Pan. I bake them for about 30 minutes until tender and crispy @ 425 degrees. They are soooooooo good like this.
