Guest guest Posted October 10, 2006 Report Share Posted October 10, 2006 This recipe is my own invention - I tend to add a bit of this and a bit of that so measurements are somewhat inexact. My slow cooker (crockpot) is just a small one, hence the small amounts. This made enough for 4 meals when served with brown rice and green veg. Christie Crockpot Lentil Stew 1 shallot, finely chopped 1 clove of garlic, crushed 1 small chilli, finely chopped 1 stick of celery, finely chopped 1 carrot, finely diced 4 small new potatoes 2 tbsp olive oil 250 mls V8 juice 2 Tbsp tomato paste 100g green lentils 1 pt vegetable stock Pinch of smoked paprika Pinch of ground cumin Pinch of dried oregano Freshly ground black pepper 1 orange or red pepper, diced Handful of mangetouts (snowpeas), finely sliced diagonally Gently sauté shallot, carrot, celery and potato in olive oil for about 6 minutes, add garlic and sauté for a further 2 minutes. Add V8 juice, lentils and tomato paste and bring to the boil. Tip into crockpot, add vegetable stock , oregano and spices. Cook on Auto for 6 hours. Add pepper and mangetout and cook for a further 30 minutes. If your crockpot does not have an Auto setting then you will need to preheat on High and then turn it down to Low.
