Diabetic Powdered Sugar

1 cup. of your splenda or sugar twin into a blender

Add 2-3 TBL. of cornstarch to it.

Run blender on high for a minute. It will make a diabetic powdered sugar

that is so light and the same texture as store bought.

Good idea, I never thought of doing that. Then do you use it like powdered

sugar? Judy H

Hi everyone

This is my first post, sorry it took so long. I was diagnosed with diabetes

October 2005. 3 weeks later I became vegan(I had been thinking about it for a

while, but procrastinated) Then my blood sugar became high and I knew something

was going on(my Mom and Sister are both diabetic) and everyone started telling

me I could not eat this or that and I did not like just meat, cheese and salad

only. Then I found out I had high cholestrol, and that is the reason I became

vegan, to lower it. Within 2 months my cholestrol was lowered(not enough), but

my blood sugar stayed normal and after 3 months of vegan eating I stopped taking

my medication for diabetes. This is the only way for me to be healthy, oh yeah I

lost 35 lbs. the 1st 5 weeks with no meat or dairy. I really do thank all of

you for the great recipes and I have tried a few of them, mostly I make veggie

pizza, beans and rice, quesidilla, " chicken " noodle soup, and everything stays

cool with my health. Thanks again

Caroline

Congratulations Caroline,

I'm really happy you're taking charge, and becoming the captain of

your own health.

While I never think that the average person should be eating Splenda,

I know it is Heaven sent for many diabetics. I can't tolerate it (I

became ill after drinking it whey protein powder the first time a few

years ago,) and I do not enjoy the taste at all, but I have to agree,

it has the best flavor of any artificial sweetener.

Here is my recipe for powdered sugar:

1 cup powdered soy milk (find it in your health food store or from

www.nowfoods.com)

1 tbsp powdered sugar or powdered sucanat (optional)

1 tsp stevia extract

spices to taste (cinamon, cloves, cardamon nutmeg, or combo)(optional)

Sift the ingredients together. The soy milk powder is already very

fine and soft, like powdered sugar. If you are diabetic, you don't

have to use the powdered sugar. Remember that the soy produces such a

flat insulin response, that in comination, and expecially since you

use such a little bit in the recipe proportionally, and consume so

little of the recipe in total, it is much safer than say eating a

potato. Stevia has it's own flavor. It is inensly sweet, peppery,

anisy and bitter if you use to much. It works wonders with soy

products. You may like less, or slightly more in your recipe.

Experiment. These spices extend the sweetness of the sugar, the

stevia, and the natural sweetness of soy. They also help tone down

the stevia and beany flavors, but they are totally optional.

Now what is this recipe good for? Dusting over healthful baked goods

and sweet dishes, and for powdering the outside of confections like

Quinten Konfekt. It doesn't work the same way though for making

glazes, and cooked candies though. Sorry. It just turns into sweet

soy milk in these aplication. Using it for glazes that dry hard,

merits some experimentations It does look just like powdered sugar

though when you dust it. It tastes a little different, but it is very

nice I think. I use it to make whole wheat health cookies. I roll the

cookies in the mixture before baking. When they come out, the look

just like those crackle top chocholate cookies, you know?
