Guest guest Posted October 28, 2006 Report Share Posted October 28, 2006 The last two times my hubby and I had tofu out at a restaurant, the texture was strange. Specifically, it was suffering from what I call " tofu skin, " i.e., it was if there was nothing in the inside of the cube...just a fried tofu " skin " on the outside...very chewy with no substance. My question...is this a preparation issue (too long in the fryer?) or a quality issue? Is it a sign of old tofu? I never have this happen at home, but I don't deep-fry my tofu at home like in a restaurant. I just pan-fry it. Plus I know bulk tofu used at restaurants is a very different consistency than the small packages one finds in the grocery store. Any thoughts? Guest guest Posted October 28, 2006 Report Share Posted October 28, 2006 Where I live there aren't many veggie-friendly choices (unless we want to fight major traffic) and at this particular restaurant, tofu is the only vegan offering. Usually the tofu at the restaurant is fine, but not the last two times. I've had the same experience at other restaurants...the dreaded tofu skin!!!
