You can make a tofurky however I would cut it in half and take out the stuffing and make your own. There are all sorts of recipes in the files. There are all sorts of Lentil loaf recipes in the files. You can make a rice dish. Here is a recipe for a corn dish you can have Gayle's Corn Casserole 2 cans creamed style corn 1 cup frozen corn defrosted some pearl onions 1 cup flour Ener-g egg replacer equivilnat to 4eggs some salt, pepper and sage mix it all together and bake for 45 min at 375 You can also add some jalapeno's to this if you choose. Last year I just picked around and ate whatever was meat free, but this year it would be nice if I could make something that everyone would eat (I think my family fears tofu...), any tips? Thanks! It's soooo good and I make it every year since my friend mad it for me when I had a baby. Butternut squash Granny smith apples. You want to peel both the squash and the apples and slice them however you want. You melt butter, brown sugar and cinnamon and pour it over the apples and squash. Cover with foil and bake at 350 for about an hour... I don't have any better directions because I always just make it based on taste I have lots of other really great dishes that I make...if you're interested! Thaw them but they don't need to be cooked (not soggy!) Mozzarella Cheese (I use about a cup) Cherry tomatoes (slice them in half) 1/2 - 1 Cup of Italian Dressing. Put all together, mix gently and store in fridge about 2 hours before serving so the dressing has time to soak in. Simple and delicious! I'm looking for others... I use tofu bacon and no one has ever complained!) 1 pound (more or less depending on how many people you have) of new potatoes. (quarter and boil them.. don't peel..boil until when you put a fork in they are soft but also firm..haha!) Chopped onion (I use a nice yellow onion and about 1/4 a cup) 4 slices of tofu bacon chopped 1/2 cup of Ranch dressing. Mix gently and store in fridge for a few hours before serving. I've also added cheddar cheese to this dish and it turns out super good! Okra and Stewed Tomatoes 1 bag of frozen okra 2 cans of stewed tomatoes 1 red onion dash of sugar cook together until okra is good and soggy! YUMMY!! Asparagus Soup 2 lbs. fresh asparagus 4 T. butter 1 medium yellow or white onion, chopped 1 large or two small leeks, the white part and some of the light green, thoroughly washed and chopped a handful of fresh parsley leaves 5 C. veggie broth salt and freshly ground pepper to taste 1 or more C. heavy cream, light cream or milk (I use soy milk!) Wash and trim the asparagus, and cut into 1-inch pieces, reserving the tips. Cook the tips in a small amount of boiling water until barely tender, then drain, rinse them in cold water and set them aside for the garnish. In a large pot, melt the butter over low heat and saute the onions and leeks until soft and translucent. Add the asparagus, parsley and broth and bring to a boil. Reduce heat and simmer gently just until all the vegetables are tender, about 10 or 15 minutes. Remove from the heat and puree the mixture in a blender or food processor. Return the soup to the pan, stir in enough cream to make a consistency you like, and heat just until steaming. Add salt and pepper to taste. Transfer to a warmed tureen or ladle into bowls and garnish with the asparagus tips.
