Jumbo Swedish Pepperkakor Cookies

Jumbo Swedish Pepperkakor Cookies

(Jumbo Gingersnaps)

 

1/2 c. sugar

2 1/4 cup all-purpose flour

3/4 cup vegetable oil

1/4 cup dark molasses

1/4 cup maple syrup

2 tsp. baking soda

1 tsp. ground ginger

1/2 tsp. ground cinnamon

1/2 tsp. ground cardamom (go on use a little more)

1/4 tsp. salt

1 large egg

 

Mix all ingredients together using spoon.

Refrigerate for 1-2 hrs makes rolling into balls

easier. Preheat oven to 350 degrees. Place 2

tablespoons sugar on waxed paper. Shape 1/4 cupful of

dough into a ball; roll in sugar to coat evenly.

Repeat with remaining dough to make 10 balls in all.

Place balls 3 inches apart on ungreased cookie sheets.

Bake 15 minutes. Remove cookies to wire racks to

cool. Makes 10 large cookies or cut in half to make

20 average sized cookies. (Crisp cookies on outside

and soft inside.)

Roll them in turbinado sugar for an extra crunchy cookie.

I bet this would be great with that Pumpkin Cream Cheese spread recipe(can't

remember the exact name)that someone sent in recently, on these. I'm always on

the lookout for a good gingersnap recipe. I like that this one has the Maple

Syrup instead of Molases for a change. I think it would add great flavor.
