Baking with Earth Balance

Good Morning Everyone. Is there anyone out there that has had

experience baking with the stick version of the vegan buttery spread

Earth Balance? Since this will be my first vegan holiday season (used

to be ovo/lacto) I have been experimenting with my regular holiday

recipes. I had tried cookies with the stick version of Earth Balance

before and though they were not over baked, I found them to have a bit

of a burnt taste to them. Yesterday, I tried a shortbread recipe, and

though it is baked at a low temp. (275), and was definately NOT over

cooked, they also had that " burnt flavor " . Has anyone else experienced

this? On the other hand, the texture was VERY nice.

I have never used the stick version but the kind in the tub always works well

for me.

I use the tub version and have never had a problem with it. Maybe it is the

stick kind? I did make something (can't remember what it was) that did burn

a bit on the bottom, but fortunately it didn't taste burnt, but I did catch

it right away.

I bake with Earth Balance sticks- at first I found things to taste a

bit too oily & buttery. I've had to play with the recipes by adding

a little more flour or sugar. Sometimes I substitute applesauce for

the Earth Balance. I have found the website www.fatfreevegan.com to

be helpful. And they have some good recipes!

They have some really interesting substitutions for butter & eggs-

most of which I haven't tried yet!

 

Does anyone have a " tried & true " vegan chocolate cake recipe? I

have tried baking many vegan cakes- but still can't get that moist

chocolate cake texture that I'm looking for!
