Yum - grow514 ; spicy_vegetarian ; SimpleMeals Tuesday, April 25, 2006 5:08 PM Tomato Mozzarella Salad Tomato Mozzarella Salad 3 large tomatoes, sliced 8 oz. mozzarella, sliced 1/4 cup extra virgin olive (EVOO) or vegetable oil 1/4 tsp. salt 1/8 tsp. ground black pepper 1/4 cup minced fresh basil On a large serving platter, alternate tomatoes and mozzarella slices. In a jar with a tight fitting lid, combine the oil, salt and pepper; shake well. Drizzle over tomatoes and mozzarella cheese. Sprinkle with basil. Yield: 6 servings. I plant one mature plant and then plant lettuce leaf size basil in the pot. It produces basil in abundance all summer. I love the large leaves. Guest guest Posted December 19, 2006 Report Share Posted December 19, 2006 Tomato Mozzarella Salad ~~~Salad~~~ 5 medium tomatoes 8 oz. mozzarella cheese Leaves from 1 small bunch fresh basil 2 TB capers, rinsed and drained Slice tomatoes and mozzarella into 1/4 " thick slices. On a serving plate, alternate tomato and mozzarella slices and basil leaves. Sprinkle capers on top. ~~~Dressing~~~ 1/4 cup chopped fresh basil or 1 TB dried basil 1/4 cup extra virgin olive oil 1 TB balsamic or red wine vinegar 1 clove garlic 1/2 tsp. salt 1/2 tsp. ground black pepper For dressing, in a food processor or blender, process basil, oil, vinegar, garlic, salt and pepper until smooth; set aside.
