Kale is new to me also and I find it better than spinach when cooked up. I tried the first recipe - kale and bean soup. All I had were chickpeas (no white beans). When the soup was cooked I used a hand held blender to thicken it. In addition to cayenne pepper I had to add the smoked paprika (I'm addicted to it). Yummy. The kale was very time consuming to prepare. Is chard easier to deal with? I just tear mine off the spines and chop and cook. I do the same with chard, rip it off the spines and cook it. Guest guest Posted September 29, 2006 Report Share Posted September 29, 2006 I prefer chard to kale. I saute the leeaves and stalks. The leaves will soften and the stalks stay a little crunchy, unlike cooked spinch that seems to disappear or kale that stays a little touch. Give it a try. I read somewhere to cut the leaves off the spines! That seemed to take forever what with chopping those huge leaves. Never gave a thought to just tearing them off. Then I tossed all of the spines/stems. They would have been good chopped up and added to the dish. The next time, I'll take your suggestions No it wasn't very dirty at all. I put kale in a Thai stir fry tonight and they were good along with everything else.
