Kale Hey Joan

The recipe section does have a whole greens folder and inside it

there is a kale folder. Kale is new to me also and I find it better

than spinach when cooked up.

Thank you all for your suggestions. I did take your advice and found

Kale in the Greens folder. I tried the first recipe - kale and bean

soup. All I had were chickpeas (no white beans). When the soup was

cooked I used a hand held blender to thicken it. In addition to

cayenne pepper I had to add the smoked paprika (I'm addicted to it).

Yummy.

 

The kale was very time consuming to prepare. Is chard easier to deal

with?

That soup sounds yummy. I don't find kale that time consuming to

prepare. Was yours really dirty? I just tear mine off the spines and

chop and cook. I do the same with chard, rip it off the spines and

cook it. Then I chop the spines and throw them in the salad.

I prefer chard to kale. I saute the leeaves and stalks. The leaves

will soften and the stalks stay a little crunchy, unlike cooked spinch

that seems to disappear or kale that stays a little touch. Give it a

try. The rainbow chard add nice color to your recipe.

I read somewhere to cut the leaves off the spines! That seemed to

take forever what with chopping those huge leaves. Never gave a

thought to just tearing them off. Then I tossed all of the

spines/stems. They would have been good chopped up and added to the

dish. The next time, I'll take your suggestions No it wasn't very

dirty at all.

Now that I think of it, the only green I cut the stems out of is collards.

I'm not sure wuich recipe you want but the one I made is in the files

under " greens. " It is the first one - bean and kale soup. I threw

away all of the stems because I didn't know any better. Next time will

chop them up and add them to the recipe. I did add my favorite new

found spice - Smoked Paprika.
