Guest guest
Well I have been away for a couple of week ends visiting a friend's mountain ranch. We canned 'jillions' of tomatoes, and pickles. Made sauce, bread and butter picks, and relish. We decided this year to make 'sandwich length ' pickles instead of the rounds because they fit better on a sandwich. We also dried tomato slices in the dehydrator and made some 'leather'. We added nothing to the tomatoes for leather and decided that we like it better than fruit leather. We experimented with the Bread and Butter brine until we got it just right for our taste..Following is our recipe for those who are interested. Smiles and hugs Deanna Bread and Butter Pickle Brine 3 cups white distilled vinegar 3 cups sugar 1 teaspoon sea salt (not iodized) 1 tablespoon mustard seed 1 tablespoon celery seed 1/2 tablespoon tumeric Bring this brine to a boil in a stainless or enamal pan and simmer for apx. 20 min...Pour over pickle slices packed into canning jars. Process in boiling water for 20 minutes. You can also make these pickles without processing and store in fridge to be used in the following month. Now my question to all of you groupies is: Do you can/preserve food?
Guest guest
No, it's always terrified me. Afraid I would create an alien in one of those jars as it aged a few months on a shelf.....LOL Donna " I don’t regret a thing I’ve disavowed With the freedom of an eagle I can always keep my head above the clouds ‘Cos I'm a happy hippy they call me Mr.. whippy When everything is scrappy being hippy makes you happy Yes I'm a happy hippy and you can bet your bippy That everybody’s happy cos everything is trippy Good day everyone. Guest guest
Donna, I found some of those suspected 'alien' type jars in my guy friend's basement. Would you believe the jars of 'whatever they were' had been on the shelves for 15+ yrs. and he insisted that some were " still good " . LOL They were also 'preserved' in regular glass jars not canning jars. When I got over my shock I informed him that I would not even touch those jars. I don't trust any canned food for more than a year even if it is in a vinegar brine. If I could figure out a way to send a jar or two of our picks I would . But afraid it would break in transit. We have already tried the picks, relish, and tomato sauce. All are great.. Sending smiles and hugs Deanna -- In , Donnalilacflower <thelilacflower wrote: > > No, it's always terrified me.
