pressure cooker Beth

Last weekend Amy from the group was here to visit, she

brought her pressure cooker. I loved it so much that

I found one yesterday. It's a Fagor brand 6 quart.

When you get yours I will help you. Last night I made

the best pinto beans I have ever eaten and the roof is

still on the house. I was terrified of them but

believe me there are safety locks, a steam escape

valve so don't fear it.

It was on sale for $59 and I had a 20% off coupon so

it ended up being $47 dollars, they gave me an extra

gasket for the lid and a nice cookbook,

They are terrific, Donna!!! Carrots and hard winter squash cook up in mere

minutes and make their own vegetable sauce!!!

I was totally taken by surprise by the gift. My parent were recently in

town visiting and they notice that I had lost weight (42 lbs) and that I

looked so much healthier. I told them the basics of what I had been

doing, but since my parents have long been big omnivores I didn't push

anything and simply said that I was eating more grains, beans, and

veggies. My dad (who's health is not well) actually started asking

question like " how hard is it to center a meal around grains and

veggies? " . They even called me one day and asked me to take them to one

of my vegetarian restaurants - where they asked even more questions. I

passed along my Dr. McDougall book to them before they left. Anyway, I

guess my mom overheard me talking to my sister. I was asking her to keep

a lookout at Goodwill for a pressure cooker. It was a nice surprise

that he decided to buy me one. It absoluetly floored me that he said it

was a Kuhn Rikon. I would have only lusted after those and never have

spent the money myself. I'll let you know when I get it. I'm looking

forward to being able to cook my beans quickly - as I'm one to suddenly

remember that I must cook dinner when it's 5 pm.

Wow, 42 pounds? Congrats! I need do to that myself! Was there more to it, or

the not eating meat made you drop weight?

Rachel,

 

I am basically trying to follow McDougalls Maximum Weight Loss Plan.

Which is no meats, no fish, no dairy (cheese was a big one for me), no

eggs, no (or severly limit) added oils, limit white flour products and

limit high fat plant foods (nuts, avacados, and soy). I am not 100% on

plan, but as long as I'm still losing weight (I have a good amount still

to go) I won't be as strict.
