need comfort food

 

 

Today was a horrible day (yes, I know it's only 11:18 am here in Wisconsin,

that should give you some idea!). Normally, I would hunker down with a big steak

or a platter of mexican food. Now that I am a vegetarian, and I need some

comfort food ideas that won't completely blow my diet and are vegetarian.

 

I'd appreciate any suggestions!!!

Can you just do Mexican food w/o the meat? I have been loving that the past few

weeks! BUT I am a guacamole freak! I hope your day got better.

If you're not vegan, try macaroni and cheese! It's my all-time comfort food

and guilty pleasure in one. Eat all you want, and this one time, don't

worry about the fat. If you ARE vegan, you could probably make it with a

mixture of soy cheeses. I'm still making the transition from vegetarian to

vegan myself.

You could always just take the meat out of the dish. That way you still get

rid of the craving but you lose the meat. Just play around with them soon

you will be able to take the meat out of a lot of the dishes and still get

rid of the meat. Like you could make a taco soup. Just leave out the beef

and the cheese if you don't consume dairy products.

 

Taco Soup

Dinner in 10 minutes? Try this hearty bowl of soup that gets a jump start

from Progresso® soup and a refrigerated meaty sauce.

 

1can (19 oz) Progresso® Vegetable Classics creamy tomato soup

1/2cup Old El Paso® refrigerated taco sauce with seasoned ground beef (from

18-oz container)

1can (4.5 oz) Old El Paso® chopped green Chiles

1/4cup shredded Monterey Jack cheese (1 oz)

1/4cup crushed corn chips

 

 

1 . In 2-quart saucepan, mix soup, ground beef and Chiles. Cook over medium

heat, stirring occasionally, until hot.

2 . Top individual servings with cheese and corn chips.

I take a whole wheat tortilla, spread on refried beans, sprinkle on cheese and

stick it in the toaster oven. When the cheese is melted I pour on some salsa

and a dab of sour cream and, if I have any, avocado.
