caramelized butternut squash

Emma and I made this from the files yesterday; it was out of this world.

Emma cooked it but I had to cut the butternut. Is there any trick to cutting

the butternut or peeling? I know Emma would have surely cut herself on this

arduous task.

Put it in the over for 10 minutes whole, then cut it. :)

A few pricks with a fork, and 5 - 10 minutes in the

microwave with soften the squash enough to peel and

cube more easily. It works on any hard rind squash -

I use the technique on acorn squash to make it soft

enough to cut into rings, which I stuff.

Having been in the same boat tonight with acorn squash, I have to

laugh. I just told my husband I seriously consider going downstairs

and getting the saw. He suggest a chain saw. Will cook a little

before trying to cut next time.

I like spaghetti squash so far the best. My favorite fall veggie is

a tie between sweet potato and pumpkin.

That's where I got the idea to try it ( but minus the Parmesan). My

daughter was at soccer but I'd like to try it when she is home so she

can see the " strands " of spaghetti after you cook it.

I have a boo boo from cutting an acorn squash yesterday! I triumphed over the

little bugger, but was let down at the amount of good stuff inside, definately

not worth the injury in my opinion!

No, I don't think it would be worth the injury either.

Hope you are okay. I found it easiest to cut part

way through and then pry apart. In all honesty, I

will stick with the usual sweet potatoes, pumpkin,

yellow squash and zucchini for the most part. I will

admit that I did pick up a liking for spaghetti squash

so the experiments were worth it.
